If the foam settles too quickly: • Pressure does not match beer temperature • Beer lines warmer than the beer in the barrel. • Small lines into large faucets. • Improper drawing gives too short a collar in the glass. • High HVAC Air flow in the serving area Cloudy Beer: • Beer over-chilled in the delivery piping or tubing. • Beer has been warmed and re-chilled. • Beer has been frozen and re-thawed • Delivery hose in poor condition. • Poor sanitation in the delivery lines • Air is contaminated. Wild Beer: • Worn faucet • Restrictions in the delivery lines. • Delivery lines are too long.

While preparing this article I learned several things about beer, I had not known (or forgotten): • The freezing point of beer is 28°F. • Beer foam is 25% liquid beer and 75% CO2 gas. • Draught beer should be stored at 38°F. • Draught beer should be served between 38°F and 42°F. • Draught beer is not pasteurized and can begin to ferment again.
